If someone else has a better anno..I don't think it is a reverse anagram.For it to be an RA, all the words of Cheese have to be there.

DeleteIt's not a reverse anagram. I tried something cheeky as a counterpart to 1A. ChE is an abbreviation for Chemical Engineer (reference Free Dictionary). Idea was that when you get ChE + ES + S, you have processed Cheese (as a word). Looks like it fell flat. Apologies.
